I have made an overview of common spice mixes and what you need to make them yourself. If you make your own spice mixes you can also be sure that there are no E numbers and / or flavor enhancers! The spice mixes are basic mixes, you can of course adjust them to taste yourself. The overview is not completely finished yet, but a good start! The mentioned spice mixes are all dry mixes, with dried herbs, except for the bouquet garni, which can also be made with fresh herbs. If you use whole herbs, such as star anise, you must first grind them into a powder (for example in a mortar). It is usually made with at least rosemary, savory, marjoram, and thyme. You can also add basil, sage and lavender.
