Why create your own spice mixes?

You can of course also make all the spice mixes available in the store yourself! I have made an overview of common spice mixes and what you need to make them yourself. If you make your own spice mixes you can also be sure that there are no E numbers and / or flavor enhancers! The spice mixes are basic mixes, you can of course adjust them to taste yourself. The overview is not completely finished yet, but a good start!

The mentioned spice mixes are all dry mixes, with dried herbs, except for the bouquet garni, which can also be made with fresh herbs. If you use whole herbs, such as star anise, you must first grind them into a powder (for example in a mortar).

Apple pie spice

The American “apple pie” is different from the Dutch one. The following spices are used for the apple mixture:

  • 2 teaspoons cinnamon powder
  • 1 teaspoon ground nutmeg
  • 1/3 teaspoon ginger powder (djahé)


Bouquet garni

A bouquet garni is widely used in soups and sauces. Tie the four herbs together with a piece of string.

  • 4 sprigs of parsley
  • 2 sprigs celery or chervil
  • 1 sprig of thyme
  • 1 bay leaf


Cajun spices

  • 1 tablespoon mild paprika powder
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon knoflookpoeder
  • 1 teaspoon cayennepeper
  • 3/4 teaspoon witte peper
  • 3/4 teaspoon zwarte peper
  • half teaspoon oregano
  • half teaspoon tijm

Chicken seasoning

  • 2,5 theelepels zout
  • 1,5 theelepel paprikapoeder
  • 1 theelepel uienpoeder
  • 3/4 theelepel bonenkruid
  • 1/4 theelepel koriander (ketoembar)
  • 3/4 theelepel knoflookpoeder
  • halve theelepel gemalen zwarte peper
  • halve theelepel tijm
  • halve theelepel basilicum

Chili powder

Chili powder is not just dried, ground chili, but there is more to it and gives a great taste to all kinds of dishes. If you don’t like it very spicy, you can add a little less cayenne pepper, but chili powder should be fairly spicy.

  • 3 eetlepels paprikapoeder
  • 1 eetlepel komijnpoeder (djinten)
  • 2 eetlepels oregano
  • 2 theelepels gemalen cayennepeper
  • halve theelepel knoflookpoeder

Chili seasoning

  • halve theelepel paprikapoeder
  • 2 eetlepels uiensnippers
  • 1/4 theelepel knoflookpoeder
  • 1,5 theelepel cayennepeper
  • halve theelepel suiker
  • 1 theelepel zout
  • halve komijnpoeder (djinten)

Chinese five spice powder

  • 2 theelepels Sichuan peper of zwarte peperkorrels
  • 8 stuks steranijs (gemalen) of 4 theelepels anijszaad
  • 1 eetlepel venkelzaad
  • halve theelepel kruidnagelpoeder
  • 1 eetlepel kaneelpoeder


People often think that curry is a spice, but curry is a combination of various spices. You do have a curry plant, but it is not used in curry. Many different spices can be used in curry powder, but the following are often used: ground turmeric, caraway, coriander, cardamom, (cayenne) pepper, cloves, ginger, cinnamon and mustard seeds. Because a slightly different combination is used everywhere, the taste can differ greatly. In countries such as India and Indonesia, the curry is made per dish.


Dutch apple pie spice mix

  • 2 teaspoons cinnamon
  • pinch of nutmeg
  • pinch of allspice / Jamaican pepper
  • half teaspoon ginger powder
  • pinch of clove powder


Fine herbs mix

Mix the following ingredients in equal amounts:

  • peterselie
  • dragon
  • kervel
  • bieslook

Fish seasoning mix

This spice mix is fairly general so it will suit most fish species.

  • 2 eetlepels peterselie
  • halve theelepel zout
  • halve theelepel zwarte peper
  • halve theelepel knoflookpoeder
  • snufje cayennepeper
  • 1 theelepel paprikapoeder
  • halve theelepel nootmuskaat
  • Het is ook lekker om een halve theelepel gedroogde dille toe te voegen.


Garam masala

Just like with curry, garam masala is also made per dish in Indian cuisine. Indian people often see their ultimate recipe for the best garam masala as a family secret. First roast the herbs in a frying pan without oil before you grind them fine in a mortar or food processor.

  • 2 eetlepels zwarte peperkorrels
  • 2 eetlepels komijnzaad
  • 1,5 eetlepel korianderzaad
  • 1 eetlepel venkelzaad
  • 1 theelepel hele kruidnagels
  • halve eetlepel kardemomzaad (zonder de peulen)
  • 3 stukken pijpkaneel, in stukken gebroken of gehakt

Garlic salt

Garlic salt is delicious on a boiled egg and actually goes well with everything. To make garlic salt, take 3 parts Kala Namak black salt and 1 part garlic powder and mix well. So to get 1 teaspoon of garlic salt, mix 3/4 teaspoon of salt and 1/4 teaspoon of garlic powder.

Greek herb mix

  • 1,5 theelepel oregano
  • 1 theelepel peterselie
  • snufje zout
  • 2 theelepels paprikapoeder
  • halve theelepel knoflookpoeder
  • snufje nootmuskaat

Gingerbread spices

  • 5 eetlepels kaneel
  • 4 theelepels gemalen kruidnagel
  • 1,5 theelepel gemberpoeder
  • 1 theelepel gemalen kardemom
  • 1 theelepel koriander poeder
  • 1 theelepel gemalen nootmuskaat
  • eventueel: 1 theelepel anijs of venkelzaad


Italian herbs

  • 2 theelepels basilicum
  • 2  theelepels peterselie
  • 1  theelepel oregano
  • 1  theelepel uiensnippers
  • halve theelepel tijm
  • halve theelepels knoflookpoeder
  • mespuntje gemalen zwarte peper
  • mespuntje salie


Mexican spices

  • 2 theelepels gedroogde uiensnippers / poeder
  • 1 theelepel cayennepeper
  • halve theelepel paprikapoeder
  • 1/4 theelepel oreganopoeder (of 1 theelepel gedroogde oregano blaadjes)
  • 1 theelepel zout
  • 1/4 theelepel knoflookpoeder
  • halve theelepel komijnpoeder (djinten)
  • eventueel: 1 theelepel maïzena


Provencal herb mix

The exact composition of Provencal herbs has not really been established. It is usually made with at least rosemary, savory, marjoram, and thyme. You can also add basil, sage and lavender.
