Avocados, tart-sweet orange and grapefruit segments, and thinly sliced mint come together on this light and refreshing open-faced sandwich. Oranges and grapefruit are featured in this recipe, but tangerines, clementines or pomelos would be excellent alternatives. Mint adds a light, herbal finish, but arugula and feta cheese would make a punchier, bolder substitute if you’re so inclined.

I love making a savory avocado toast with eggs, but I also enjoy whipping up a simple recipe with avocados, bread, and honey for busy days. This discovery, however, is quite delicious and perfect for the spring.

Citrus on toast?
The citrus in this recipe does wonders as a toast topper. Fresh fruit is the perfect amount of sweet, with no added sugars, and you know exactly what’s in it. And apparently citrus fruits releases its sugars slowly into the blood stream, so we can avoid that afternoon crash altogether – bonus! Plus, you get to enjoy all the fruity juices that come from every citrusy bite. And with citrus season in full swing, my are they juicy.
